Jersey is a very soft, often elastic fabric (due to a proportion of elastane), which is often knitted or warp-knitted from viscose or cotton blends.
Basically you differentiate between single and double jersey. With single jersey, knit and purl stitches are used alternately, which makes the fabric very stretchy. Double jersey is knit either left-left or right-right. This meshing makes the fabric more robust and of higher quality.
